-“2”位客人需要“正方台“,凳對凳
-“3-4”位客人需要“長台”,3位就2張凳對門,1張對面;4位就每邊2張
-“6”位客人需要“長台+正方台”,每邊各3張凳
客人進場時講:Good afternoon sir/madam/madam sir, how may I help you?
1. This way please帶客入座,幫客人拉凳
2. 拿起餐巾,在客人右手邊將餐巾打開折三角形,講: excuse me sir/madam. 餐巾鋪在客人腿上
3. 因為Lady first,所以對一位女士講Madam, what would you like to have a drink to staff with it's includsive in the menu?女士答完後同下一位講:Sir/Madam,want would you like? 回答完後講Sir/Madam, how about you?如此類推,直至問完全部客人
4. 倒少少暖水落水壺,拎水壺係客人右手邊倒落個水杯七成左右(Lady first)
5. Present Menu (一個客一份)打開menu檢查是否正確,正確後拿著頂部(一手頂一手低)去客人右手遞比客人講: excuse me sir/madam, here is the menu
6. 一個人站在臺前向所有客人講: Excuse me Madam sir, may I introduce the lunch menu to you?
Today, we are serving 3 course set lunch, the starters are lobster bisque or salad nocoise. Followed by pork milaniese or roasted spring chicken.
The dessert is chocolate brownie.

7. 要落單時站在臺前向嗰位客人講(Lady first)Madam/sir, may I take your order please? 客人講完後講Thank you
9. 全部客人都完成後講Madam sir, may I repeat the order to you please?客人回答後根據落單順序向每一位客人講: You have order......
10. 起飲料,左手拿Tray,放腰間位置,客人右手邊落飲料,拎杯底放水杯5點位置(Lady first)
11. 將單拿去廚房後(唔清楚)用Tray拿麵包(有麵包籃)和牛油(有碟)
12. 移開臺上的胡椒、鹽和飲料牌,將麵包(有麵包籃)和牛油(有碟)放在臺中間
13. 客人食完包後落餐(Lady first, 根據落單順序),在客人右邊落餐講: excuse me sir/madam, here is your (餐名). 離開前向所有客人講: Madame sir, please enjoy your meal/starters.
*soup的話杯耳需向左右
14.當臺上包籃沒有包時需要填包。客人食到一半左右需通知廚房準備主菜。在全部客人食完頭盤後係客人右邊收碟(不要分開收)。客人右邊上Main dish(Lady first, 根據落單順序),講: Excuse me sir/madam, here is your(餐名) 。落完全部客人後將麵包放臺的一邊,中間放薯菜(用Tray),2對分羹叉(1對薯1對菜),離開前向所以客人講: Madam sir, please enjoy your main dish.
15. 食完係客人右邊收碟、同時收味架、包籃、牛油碟,接著掃食物碎,用碟接著,在客人左邊掃前講: excuse me sir/madam,掃完後幫客人將甜品羹叉移去左右(左叉右羹)。完成一切後臺面剩餘甜品羹叉、水杯、飲料和花瓶
16. 右手落甜品時講 Sir or Madam(Lady first, 根據落單順序), here is your dessert,離開前向所有客人講 Madam sir, please enjoy your dessert.
